Pinterest Challenge - Day 17 - Kabocha Squash Curry

My Kabocha Curry:



 

What you'll need:

  • 1 tablespoon vegetable oil
  • 1 medium yellow onion, medium dice
  • 1 1/2 teaspoons kosher salt, plus more for seasoning
  • 2 medium green bell peppers, seeds and ribs removed and cut into 1/4-inch strips
  • 4 medium garlic cloves, finely chopped
  • 1 tablespoon peeled and finely chopped fresh ginger (from about a 1-1/2-inch piece)
  • 3 tablespoons Thai red curry paste
  • 1 (13- to 14-ounce) can unsweetened regular coconut milk
  • 1/2 cup water
  • 1 tablespoon soy sauce
  • 1 medium kabocha squash (about 2 1/2 pounds), peeled, seeded, and cut into 1-inch cubes
  • 2 teaspoons freshly squeezed lime juice
  • 1/4 cup coarsely chopped fresh cilantro
  • While rice for serving

Ok first Things first cut up the Kabocha squash because it has a really tough peel that takes a while to get off. Once you got the Kabocha squash peeled cut it in half and remove the seeds. Cut the squash into about 1 inch squares. 







Heat the oil on large skillet and add the onion and start cooking on a medium temp skillet. Add the onion and some salt and cook until the onion is softened, about 6 minutes.

While the onion is cooking:

Prep the green pepper by cutting it into 1 inch pieces as well. Mince up the ginger, mix the green pepper, ginger and garlic together.







 


Add the peppers, garlic, and ginger and cook until fragrant, about 1 minute. Add the curry paste and cook for another minute.



 

While the pepper/curry paste is cooking: 

      Mix together the water, soy sauce and coconut milk and salt.




Add the coconut/soy mixture to the skillet with the squash and reduce heat to medium low and cook for 20-25 minutes, stirring occasionally. Cook till the squash is easy to slice through with a fork.





Squeeze lime juice and add cilantro to the curry when its ready and the serve over rice.

Pinterest Challenge - Day 16 - How to cut a pineapple

My Pineapple: 

I absolutely love fresh pineapple but usually opt out for the canned or pre-cut version. It time once and for all to figure out how to cut my own pineapple, I mean it cant be that hard, right?

Ok first things first, buying a pineapple: According to this video you can tell if a pineapple is ripe by pulling out one of the center green petals. If it comes out easily then the pineapple is ready

Prep work (also good info): Before cutting up your pineapple, turn it upside down and keep in fridge for 30 mins to let the juices and sugars redistribute throughout the pineapple. Little hint: Don't be dumb like me and try to balance the pineapple upside down on the green part, just cut the green stuff off. Trust me its much easier that way

 

After your pineapple has been upside down for 30 mins, set out at room temp for like 5 so that your not cutting through while its rock hard.



 

 

Cut off both ends and discard. Then stand the pineapple up in one end and slice off the skin by cutting straight down the side, I made about five downward slices to get all the skin off.



 

 

Once all the skin is off. Lay the pineapple on its side and make vertical slices, this cuts it in the rings that I wanted. All that left is to remove the cores. Take a small knife or if you have fancy coring supplies you could use those to to cut out the center circle of the pineapple.



 

 

You are left with rings to eat by itself or cooked and paired with something. I used mine with a teriyaki pork.

HOLY SNOWBALLS

Im amazed, just amazed. Being in a new place during the change of the season has been invigorating. A winter storm has dumped 20 inches of snow to the Salt Lake area with no signs of stopping. For people from the area this marks the bigninnnig of just another winter. But for me its like stepping out into another world! Ive never seen so much snow in my life! 

Winters back home are marked by barren landscapes and frigid wind chills. I hated winter and couldn't wait for the return of warm weather. Here however it seems that winter could be beautiful with everything covered with a thick layer of puffy white snow!

 My Kitchen Wall Storage: 

My kitchen is so so small, with really minimal cabinet or counter space. I was desperate and IKEA came to my rescue. I had seen examples of IKEA wall storage setups and finally decided to put a few shelves up to help with my unfortunate kitchen arrangement.

Pinterest Challenge - Day 14- Homemade Pita Chips

 My Homemade Pita Chips:

Heres what youll need:
  • Pita bread
  • Olive oil
  • Garlic 
  • Spices




Start by prepping the bread, cut into 8 slices.




 Arrange cut pita pieces onto baking sheet



Mix together olive oil, garlic and spices. You dont need to measure anything just eyeball how much you'll want on your pita

 


Brush or spoon mixture over pita and place in the oven for about 10 minutes. If you want more crispy pita like shown in the pinspiration picture then leave in a little longer. Be sure to watch them if your going for the crispy chip because they can burn easily

Pinterest Challenge - Day 13 - Honey Sugar Face Scrub

 My Honey Sugar Face Scrub: 

  What youll need: 

  • Sugar
  • Honey
  • Olive Oil
  • Salt
Mix together equal parts of each ingredient, I used about a tablespoon of each.

Apply to desired area and scrub!

I did my face and chest and was surprised at how wonderful and rejuvenated my skin felt! I would not recommend this scrub for people with a naturally oily skin because the olive oil really adds moisture. However it worked perfect for my dry skin and the granules of salt and sugar really helped to scrape off the dry and dead layers of ski, leaving my skin feeling clean and pampered

My Squash and Apple Bake:


This was my first time attempting to cook squash and I was very impressed. Ive been trying to improve my diet and foods like this make it easier to manage.

What you'll need:

  • 1 large butternut squash cut in half with seeds scraped out
  • 2 apples peeled and chopped into pieces
  •  1/4 cup brown sugar
  • 2 Tbsp butter
  • 1/2 Tbsp of flour
  • Cinnamon


Combine the brown sugar and butter in a bowl and mix together.  Spread some of mixture into scraped out portion of the squash. Top with the peeled and chopped apples. Then add the rest of the brown sugar mixture over top of the apples. Then finish it all off by sprinkling cinnamon over both the squash and apple. Bake in 350 degree oven for 1 hour - 1.5 hours. The squash is done when you can easily place a fork into it all the way down to the peel.

Weighted Lunge:

Stand a few feet in front of couch, facing away from it, a dumbbell in each hand. Extend left leg behind you and rest top of foot on seat. Keeping torso tall, right knee over ankle, lower body until right thigh is parallel to floor (as shown). Return to start; complete reps and switch sides.

Victory press

Kneel on a pillow, holding a dumbbell in each hand. Bring arms out to sides, with elbows bent to 90 degrees and hands level with ears, palms forward. Contract abs as you press arms overhead (as shown). Return to start; repeat.

Torso Twist

Sit on floor with legs extended and knees bent. Hold a pillow with both hands at chest level and lean back at a 45-degree angle. Maintain this position as you contract your abs and twist torso right (as shown) and then left to complete one rep. Repeat.

 One Arm Row

With couch on right, a dumbbell in left hand, place right knee on couch. Lower torso parallel to couch; place right hand on couch for support. Extend left arm to floor, palm facing in. Bend arm and lift elbow back to shoulder level so upper arm is parallel to floor. Extend arm straight back (as shown). Return to start and repeat reps; switch sides.

Incline Push-Up

Start in push-up position with hands on chair or couch. Lower chest toward chair, keeping head aligned with spine (as shown). Push up until arms are straight but not locked. Repeat.

Abdominal Curl

Lie faceup on floor, an arm's length from couch or sturdy chair. Lift feet off floor, knees together, and place a pillow between hamstrings and calves. Reach arms overhead and grip couch or chair leg with both hands (as shown). Contract abs as you curl knees toward chest. Release and repeat.

One-Legged Squat

Stand facing chair or couch about 2 feet away. Place right foot on seat, arms raised at chest level, palms in. Keeping arms lifted throughout, lower into a squat as if sitting in a chair (as shown), being careful not to let left knee creep past toes. Return to start; do all reps; switch sides.
